So far I've made your wheatberry salad, the roasted tomato and basil pesto, and last night your butternut squash and black bean burritos with great success! My meat and potato loving boyfriend cannot get enough of computer! We can't stop cooking out of this cookbook (and I cannot keep copies on my shelf!) We had a potluck here a couple weeks ago and devoured the Creamy Avocado-Potato Salad (so creamy), Glowing Strawberry-Mango Guacamole, Crispy Almond Butter Chocolate Chip Cookies, and much more. And be certain not to miss the Soul Soothing African Peanut Stew that lives up to its name and Angela's inventive and scrumptious Homemade Yolos. If you're anything like us, you will be hooked from the first recipe. Another epic win. Modeled on the flaky chicken salad the writer used to take pleasure from in her pre-vegan (pregan!) days, the mashed chickpeas (no skinning required!) give a nice, flaky base for the salad. Also present: mustard, vegan mayo, dill pickles, red peppers, and celery (though I omitted it - too weird and stringy for me personally!). The dill is optional but takes the salad to the next level. Seriously, don't skip it. Unless you loathe dill. Then do. However, not before reconsidering your priorities and life choices. Today, I want big, hearty vegan breakfasts. I'm talking breakfast burritos, pancakes, quiche, breakfast sandwiches, waffles, scrambles, french toast, and all things to make an epic vegan morning feast. Finding a dinner that everyone will enjoy is always challenging, but these vegan dinner recipes are a hit with vegans and non-vegans alike. They're also great to bring to a social gathering or potluck! A straightforward, no-cook healthy energy chocolate bar that tastes great. This may also are basics to any tart of your fancy.
