Slow Roasted Garlic Chicken Dinner Menu

Each year on May 5, the St. Louis area comes alive with Cinco De Mayo (5th of May) celebrations. Though the St. Louis are is made up of only approximately 2.3% Hispanic/Latino population, everyone enjoys a good Cinco De Mayo celebration or party. If you are hosting a Cinco De Mayo party or just enjoy food with a Mexican flair, following are 5 easy, frugal recipes to enjoy.I convinced some other friends to go back. With another beautiful night, we were lucky to get another table outside. We started with the Korean chicken tacos slow cooker - 3 perfect soft shell tacos with roasted shredded chicken, home-made hoison sauce, and kimchi slaw. A definite thumbs up from all three of us - the tacos were very light and refreshing, perfect for the summer night. My friends ordered the Macaroni & Cheese and Caprese Sandwich. Both of them were very pleased with their meals. I of course, had to stick with my burgers, so I tried the Dallas - onion straws, bleu cheese and bacon with barbecue sauce. I wasn't as crazy about the Dallas as I was with the Tokyo, but I got my fix.The main dish utilizes my favorite appliance: the crockpot. Just throw some boneless chicken breasts in the crockpot along with a jar of picante sauce or salsa (ideally of the homemade variety). Cook on low for 6 hours until the chicken is falling apart. Wrap the chicken in a wheat tortilla with some avocado, shredded lettuce, and low fat sour cream, and you have a tantalizing taco chicken. If you don't want to use the crockpot, simply cut the chicken up and saute it with salsa in a skillet instead.Summertime is a great time to use the slow cooker chicken taco, too. The kitchen doesn't get hot while it's cooking! You can cook great crowd-pleasing favorites like casseroles, dips, and chilies easily in your crock-pot - then you relax and enjoy the fun, too!Try the Cubano sandwich with ham, pork, Swiss cheese, pickles and mustard or the roast pork dinner for a filling meal.
