Many people who lead busy lives do not have time to come home and prepare a healthy meal. Many times, frozen processed food takes the place of healthier meals due to lack of time. By the time you get home from work you are likely so exhausted that you do not feel like spending another hour or two in the kitchen cooking a well balanced meal.This weekend, White Silo is holding it's 6th annual Rhubarb Festival. The festival will feature six scrumptious dishes prepared with farm fresh rhubarb plucked straight from the rhubarb patch. Dishes will include slow cooker chicken tacos with rhubarb salsa, French toast with rhubarb syrup, rhubarb crisp, and vanilla panna cotta with gingered rhubarb compote, rhubarb ice cream sundae with warm rhubarb sauce, and mixed greens with roasted rhubarb. The festival will also feature live music on Saturday by Blue Yodels from 1:30 p.m. - 4:30 p.m. and Martin Meyer on Sunday from 12:30 p.m. - 4:30 p.m. to enliven the festive atmosphere. The festival takes place from noon to 5 p.m. each day.The main dish utilizes my favorite appliance: the crockpot. Just throw some boneless chicken breasts in the crockpot along with a jar of picante sauce or salsa (ideally of the homemade variety). Cook on low for 6 hours until the chicken is falling apart. Wrap the chicken in a wheat tortilla with some avocado, shredded lettuce, and low fat sour cream, and you have a tantalizing taco chicken. If you don't want to use the crockpot, simply cut the chicken up and saute it with salsa in a skillet instead.The easiest way to cook those nutritionally well balanced meals is to have two small appliances that will help. The first is a slow cooker chicken taco. You can place your ingredients into the slow cooker chicken taco, set the time and let your meal cook while you are at work. When you come home, you will have your meal waiting for whatever you might want to add to it, and your family and you are ready to share a balanced home cooked meal. The second small appliance that you should have is the microwave. Perhaps you now only use your microwave to heat up left overs or to warm up precooked foods. But you can cook some very healthy and tasty meals in your microwave. Get rid of the precooked foods as they do not have the nutritional value a good home cooked meal has.And for desserts you can order bunuelos which are a lightly fried tortilla, cinnamon chicken taco dip appetizer sugar coated, topped with honey; served with vanilla ice cream and cajeta sauce or chocolate brownie for $4.95. or the traditional tres leches ore even a vanilla flan for $5.95.
