Add sauce into a casserole pan and spread it out evenly. Then add a layer of lasagna noodles, a layer of eggplant, sauce, a layer of cottage cheese, spinach mix, and then another layer of lasagna noodles. It's pretty good if not really special. There are some vegetarian selections on the menu, too.They can cook and have a chicken and mushroom casserole ready for the table in 4 to 8 hours depending on when you're ready to dish up. The higher the temperature setting the shorter the cooking time will be.Cover loosely with aluminum foil, being sure to "tent" it so that steam can escape and to prevent cheese from sticking to foil. Bake at 350 degrees for about 25-30 minutes or until hot and bubbly. Cool, cut and enjoy! May be served with garlic bread, salad or even by itself if you wish.
