Mindful of this dictum, the trendy TriBeCa cocktail emporium Macao Trading Co. recently enlisted the services of Chef Josh Blakely, who earned his culinary stripes under Mario Batali in the kitchen at Babbo. Should we fill it with duck confit? Bind it together with meat glue?First, Sear your meat and veggies with liberal salt and pepper. some people like to coat their meat in flour. I don't suggest this because it can burn very easily. If you are using pork belly names, leave the skin on. Throw in some carrots, celery and shallots. maybe apples if you want. Then sear the meat until it is more than golden brown. The best sears are the ones that are as close to burning as you can get with out actual burning or carbon development. Remember to salt heavily in this stage as salt brings out most flavors of your veggies.Next was the pork meal. I love pork so this was good but who knows what we were to get. Roti de Porc is its name and it was actually incredibly delicious. It was Roast White Rocks slow cooker slow cooked pork belly with Pork Rillette Pancake and Panada Stuffed Baby Apple. All sweet and very delicious.Next we had the Salade De Jicama et Ormeaux. In the salad was jicama and braised abalone with crab salad and yuzu noodles. These noodles were unlike slow cooked pork belly any we had seen before. They were dark caramel in colour and of a gelatinous consistency. The meal was sweet and delicious.Stab the pork with a knife a few times and rub the spices and salt on the flesh only (not the skin). I recommend layering the spices in the following order: spiced ginger powder, 5 spice powder, white pepper, salt and optional msg.As if all this was not enough, there is yet another advantage to the Forex markets.
